Description
Marinated mushrooms have a concentrated, slightly sour taste with a distinct umami and spice (garlic, allspice, pepper) note, and their appearance features shiny caps and stems in shades of white, beige, or brown, submerged in a clear, aromatic brine. The texture is firm, sometimes slightly crunchy, making them an appealing flavor and visual addition. Nutritionally, marinated mushrooms are low in calories, providing plant protein, fiber, B vitamins, selenium, and potassium, as well as antioxidants; however, it is worth noting the higher salt content in the brine. They can support the immune system and diversify a vegetable diet, while unpasteurized fermented versions contain beneficial probiotic bacteria. Typical uses include appetizers, salads, sandwiches, pizzas, spreads, and meat dishes as a flavor enhancer. Once opened, they should be stored in the refrigerator in the original brine in an airtight container and consumed within a few weeks; unopened jars should be kept in a cool, dry place.
