Dried mushrooms (boletus, bay boletes)
Description
Dried mushrooms (porcini, bay boletes) are characterized by an intense, concentrated umami flavor with earthy and nutty notes, as well as a dark brown, wrinkled, hard texture that regains a meaty consistency after soaking. They add depth and aroma to dishes, and the soaking broth is a valuable addition to sauces and soups. Nutritionally, they are low in calories, a source of plant protein, fiber, B vitamins, potassium, selenium, and antioxidants; they also contain polysaccharides (beta-glucans) that support the immune system. In the kitchen, they work well in risottos, soups, sauces, dumplings, stews, and as a base for spreads or seasonings in powdered form. They should be stored tightly in a dry, cool, and dark place, protecting them from moisture and insects; once opened, they can be stored in the refrigerator or frozen, and before use, they should be soaked for 20–30 minutes, keeping the soaking water.
