Apple (peeled and grated)
Description
Peeled and grated apple is delicate, moist shreds with a light, creamy-white color and a pleasantly juicy, slightly fibrous texture; the flavor ranges from sweet to slightly tart, depending on the variety, making it a versatile ingredient with a subtle, fruity aroma. From a nutritional standpoint, it provides dietary fiber, vitamin C, potassium, and polyphenols, including pectins, which support digestion, a feeling of fullness, blood sugar regulation, and heart health due to their antioxidant properties. In the kitchen, grated apple works well in baked goods, pancakes, fritters, purees, compotes, fillings for poultry and pork, and as a base for sauces and chutneys, adding moisture and natural sweetness. To prevent browning, store in the refrigerator in an airtight container with a bit of lemon juice and use within 24–48 hours, or freeze in portions (preferably with a small amount of sugar or juice) for several months.
