Barley groats
Description
Barley groats are whole grain, slightly flattened grains with a warm, straw-beige color and a distinctly nutty, mildly sweet flavor with a pleasant, firm texture when cooked. Thanks to the retained bran layer, they have a characteristic, slightly chewy bite, making them a satisfying base for both savory and sweet dishes. Nutritionally, groats are a source of fiber (including beta-glucans), plant protein, B vitamins, and minerals such as manganese, magnesium, and iron; they have a low glycemic index, support digestion, prolong the feeling of fullness, and contribute to lowering cholesterol levels. They work well in soups, salads, risottos, grain dishes, fillings, and as an addition to one-pot meals, as well as a base for a warm breakfast. Store in an airtight container in a dry, cool place; if necessary, they can be kept in the refrigerator or freezer to extend shelf life and protect against moths.
