Description
Cocoa powder is a fine, intensely brown powder with a strong chocolate aroma and a flavor profile ranging from bitter, slightly astringent to fruity and sour, depending on its origin and processing level (natural vs. alkalized/Dutch). Its appearance can be matte and uniform, and the flavor is enhanced when combined with fat and sugar. Nutritionally, cocoa contains polyphenols and flavonoids with antioxidant properties, magnesium, iron, and fiber; it supports heart health and mood, although one should keep in mind the calorie content of added ingredients in preparations.
