Description
Cleaned squid rings have a delicate, slightly sweet taste of the sea and a pleasantly firm, elastic texture that becomes tender with a short cooking time or grilling, but can become tough with prolonged cooking. They appear as uniform, whitish-cream circles with a smooth surface, easy to prepare and aesthetically pleasing on the plate. Nutritionally, they are a rich source of protein with low fat content, providing B vitamins (including B12), selenium, phosphorus, and potassium, as well as omega-3 fatty acids; they support muscles, the nervous system, and metabolism, although they contain a moderate amount of cholesterol, and those allergic to shellfish should avoid them. They are typically served briefly fried (calamari), grilled, stewed in sauces, in paella, risotto, or salads and pasta, where they pair well with lemon, garlic, and herbs. To maintain freshness, store in the refrigerator at 0–2°C and use within 1–2 days or quickly freeze in an airtight container; thaw gently in the refrigerator and avoid refreezing.
