Description
Wild boar shoulder is dark, well-muscled meat with an intense, slightly gamey aroma and hints of nutty and peppery notes. It has a deep red color and distinct fibers with moderate marbling of fat, which adds depth of flavor and juiciness after long cooking. The meat is rich in protein, iron, zinc, and B vitamins, and often has a lower fat content than some cuts of pork, making it a valuable part of a diet when consumed in moderation. Wild boar shoulder is best suited for slow braising, roasting, marinating, and smoking, and pairs excellently with red wine, berries, rosemary, and spices. Store fresh meat in the refrigerator at a temperature of 0–4°C for 2–3 days or freeze tightly for 4–6 months; thaw slowly in the refrigerator and allow to reach room temperature before cooking for even roasting.
