Description

Pak choi, also known as bok choy, is a tender Chinese cabbage with glossy, dark green leaves and meaty, white stalks. The flavor is mild, slightly sweet with a subtle green spiciness, and the texture combines the crunchiness of the stalks with the softness of the leaves, making it a versatile addition to dishes. It is low in calories, rich in water and fiber, and contains valuable vitamins A, C, and K, folic acid, as well as minerals such as calcium and potassium; it contains antioxidants and sulfur compounds typical of cruciferous vegetables, supporting digestion and overall immunity. It works wonderfully in stir-fries, soups, braised or steamed, pairs well with soy sauce, garlic, ginger, sesame, fish, tofu, and noodles, and can also be served raw in salads. Store unwashed in the refrigerator, preferably in a perforated bag or container in the vegetable drawer, and use within a few days; for longer storage, blanch before freezing.
