Roasted buckwheat groats
Description
Roasted buckwheat has an intense, slightly smoky and nutty flavor, a dark brown color, and distinct, loose grains after cooking, which retain a somewhat firmer texture than unroasted buckwheat. It is naturally gluten-free and nutritionally valuable: it provides fiber, complete plant protein, magnesium, manganese, B vitamins, and rutin—a flavonoid with antioxidant properties. Regular consumption supports digestion, helps with glycemic control, and positively affects cardiovascular health. In the kitchen, it works well as a base for salads, warm one-pot dishes, soups, fillings, and patties, as well as an alternative to rice or millet; it pairs excellently with mushrooms, vegetables, herbs, and richer sauces. Store it in an airtight container in a dry, cool, and dark place; once opened, it is best used within a few months, and cooked buckwheat should be kept in the refrigerator for 3–4 days or frozen.
