Description
French mustard, often associated with Dijon, has a creamy, smooth texture and a color ranging from light yellow to beige; its flavor is distinctly sharp, slightly peppery, and aromatic, with a subtle acidity from wine vinegar or white wine. Thanks to the use of mustard seeds, it has a characteristic, long-lasting aftertaste that can enhance dishes without overpowering their aroma. It is low in calories and usually low in fat, containing trace amounts of protein and minerals such as selenium and magnesium, while the phytochemical compounds in mustard support digestion and have antioxidant properties. It pairs perfectly with meats, poultry, sauces, marinades, vinaigrettes, and sandwiches, as well as being an excellent addition to cheeses and vegetables. It should be stored in a cool, dark place before opening; after opening, it is recommended to keep it in the refrigerator in a tightly sealed jar and use it within a few months.
