Description
Cooked chestnuts have a sweet, slightly nutty-chestnut flavor and a creamy, starchy texture; when peeled, they are light yellow to light brown, with a thin dark brown skin and smooth flesh. They are an energy-rich ingredient with lower fat content than most nuts, high in complex carbohydrates and fiber, and a source of B vitamins, potassium, magnesium, and antioxidants; they are naturally gluten-free, help maintain a feeling of fullness, and support digestion and heart health due to their fiber and mineral content. Cooked chestnuts work great as a base for creams, purées, soups, and fillings, complement meats (especially game), salads, and desserts (e.g., chestnut cream, mont blanc), as well as a side for roasts and risottos. They can be stored in the refrigerator in an airtight container for 3–4 days, and for longer storage, they can be peeled and frozen for about 3 months; before use, they should be gently warmed to regain their creamy texture.
