Natural kefir
Description
Natural kefir is a creamy-white, slightly carbonated drink with a smooth, sometimes lumpy consistency; the taste is distinctly sour, subtly creamy with a hint of yeast-sourness, pleasantly refreshing. Depending on the fermentation level, it can be liquid or thicker, resembling thin yogurt. Kefir is rich in protein, calcium, B vitamins, and enzymes, and most importantly, natural probiotics that support gut microflora, digestion, and immunity; it also has a lower lactose content than milk, making it better tolerated by some individuals. In the kitchen, it is suitable for smoothies, cereals, sauces and dips, marinades, cold soups, and baked goods, adding a creamy-sour accent to dishes. It should be stored in the refrigerator at a temperature of 2–6°C, tightly sealed; once opened, consume within a few days, avoid long storage and multiple reheating, freezing changes its structure.
