Rainbow Power Pancakes are not only a delicious and colorful meal that will delight any picky eater, but they are also a powerhouse of healthy ingredients that support your child's gut microbiome. The base of the pancakes is natural kefir, rich in live cultures (probiotics), which are guardians of well-being. The addition of whole grain and oat flour provides fiber, while a ripe banana is a source of prebiotics – 'food' for good bacteria. Instead of sugar, sweetness comes straight from nature. The colors are achieved using natural colorants, such as beet juice or turmeric, making the dish even more appealing and valuable. Served with a variety of fresh fruits, the pancakes become a complete, balanced meal, perfect for an energetic start to the day.

Preparation steps

Preparing the dough

In a large bowl, combine the dry ingredients. Place whole wheat flour, oat flour, and baking powder in the bowl. Use a whisk to mix them thoroughly and aerate. This will make the pancakes fluffier and ensure the ingredients are evenly distributed.

To mix the dry ingredients, it's best to use a whisk – it's a quick way to 'sift' the flour without a sieve and eliminate any potential lumps. Mix for about 30 seconds, making circular motions.

In a second, smaller bowl, prepare the wet ingredients. Peel the banana, place it in the bowl, and mash it thoroughly with a fork until it becomes a smooth paste, without large chunks. Then, crack the egg into the banana and pour in the kefir. Mix everything vigorously with a whisk or fork until a uniform, smooth liquid forms.

The riper the banana, the easier it is to mash and the sweeter the pancakes will be. Make sure that the egg and kefir are well combined so that the batter has a uniform consistency.

Now combine the contents of both bowls. Pour the wet ingredients into the bowl with the dry ones. Using a spoon or spatula, mix everything just until the ingredients are combined. There may be small lumps in the batter – that's okay! Mixing too long will make the pancakes tough and rubbery.

The key to fluffy pancakes is gentle and brief mixing. Stir with a scooping motion from the bottom to the top for a maximum of 1 minute. Do not use a mixer at this stage!

Creating colors (optional)

If you want to make rainbow pancakes, divide the prepared batter into 3 equal parts, transferring them to separate small bowls. Leave one part in its natural color. This will be your base for experimenting with colors.

Use three bowls of similar size to easily assess whether the portions of dough are equal. You can use a kitchen scale for perfect precision.

Add a different natural dye to each bowl. To the first one, add a tablespoon of beet juice (pink color), to the second, two pinches of turmeric (yellow color). To the third, add blended spinach (to make the dye, blend a handful of leaves with 1-2 tablespoons of batter until smooth, then add to the rest of the batter in the bowl). Gently mix each portion, just until the color is combined.

Remember that natural dyes may be less intense after frying. Do not add too much so as not to change the flavor of the pancakes. Mix gently to avoid destroying the fluffiness of the batter.

Frying the pancakes

Prepare a frying pan. The best choice is a pan with a thick bottom and a non-stick coating. Set it over medium heat and wait until it is well heated. Pour about half a teaspoon of oil into the pan and spread it with a silicone brush or paper towel over the entire surface.

How to check if the pan is ready? Sprinkle a little water on it - if the droplets 'dance' and evaporate quickly, the temperature is perfect. Too low a temperature will cause the pancakes to absorb fat, while too high a temperature will burn them on the outside while leaving them raw on the inside.

Place a heaping tablespoon of batter onto the heated skillet for each pancake, leaving space between them. Fry on medium heat for about 2-3 minutes on one side. You will notice air bubbles forming on the surface and the edges starting to set - this is a sign that it's time to flip the pancake to the other side. Fry on the other side for another 1-2 minutes, until golden.

Use a thin, flexible spatula to flip the pancakes – it will make the task easier. Do not press the pancakes down onto the pan after flipping, as they will lose their fluffiness. Place the finished pancakes on a plate lined with paper towels to absorb excess fat.

Serving

While the pancakes are frying, prepare the fruit. Wash them thoroughly under running water and dry. Slice the strawberries or cut them into quarters, peel the kiwi and slice it. Leave the blueberries whole. Arrange everything on a plate, ready for decoration.

Involve your child in preparing the fruit (of course under supervision). They can wash the blueberries or arrange the fruit on a plate. It's a great fun and a way to encourage eating.

On a plate, stack a tower of colorful pancakes, alternating them. Decorate generously with fresh fruits, creating cheerful patterns – for example, a smiling face, the sun, or a rainbow. If you like, you can drizzle the whole thing with a bit of maple syrup or natural yogurt. Serve immediately while they are warm.
