Description
Fresh sage leaves have a distinctive, intense aroma with notes of pine, eucalyptus, and citrus, along with a slightly bitter, peppery taste; they are elliptical, gray-green, and lightly hairy, which adds to their decorative charm. They contain vitamins A and K, trace amounts of vitamin C, and minerals such as calcium and iron, as well as essential oils and antioxidants with anti-inflammatory and antiseptic properties; they are traditionally used to aid digestion and as a remedy for cold symptoms. In the kitchen, sage pairs wonderfully with poultry, pork, rich butter (e.g., brown butter), pumpkin, beans, and cheese-based dishes, adding a deep, aromatic touch; it can be fried until crispy, added to fillings, or used in infusions. Store the leaves wrapped in a slightly damp paper towel in a perforated bag in the refrigerator and use within 1–2 weeks, or for longer storage, freeze chopped in oil or dry them.
