Description
The Kozak is an edible mushroom with a juicy, meaty texture, a cap ranging from light to dark brown with a smooth or slightly velvety surface, and a characteristic, often scaly stem. The flavor is delicate, slightly nutty and earthy, and after cooking, it gains a pleasant umami note. Nutritionally, the Kozak is low in calories, provides protein and fiber, as well as B vitamins, and minerals such as potassium and selenium; mushrooms may contain vitamin D after exposure to light. Regularly incorporating them into the diet supports meal variety, provides antioxidants, and helps maintain a balance of trace elements. The Kozak is great for frying, stewing, soups, risottos, fillings, and pickling. It should be stored in the refrigerator in a paper bag or in a cool, ventilated place, used within a few days, and for longer storage, blanched and frozen or dried.
