Description
Fresh corn has a sweet, slightly starchy flavor with a juicy, crunchy texture; the kernels are round, shiny, most often yellow or white, densely arranged on a cylindrical cob surrounded by green leaves and fibrous "silk." It is a source of easily digestible carbohydrates, fiber, B vitamins (including folic acid), vitamin C, and minerals such as magnesium and potassium; it also contains antioxidants lutein and zeaxanthin, which are beneficial for vision. Thanks to its fiber content, it supports digestion, and as a carbohydrate ingredient, it provides energy. Corn is suitable for grilling, boiling, salads, soups, salsas, pasta dishes, and as a base for polenta or tortillas. To maintain freshness, store the cobs in the refrigerator in their husks and use within 2–3 days; shelled kernels can be kept in an airtight container for a few days, and for longer storage, blanch briefly, cool, and freeze.
