Drained canned corn
Description
Canned corn, drained, consists of bright yellow, shiny kernels with a sweet, slightly starchy flavor and a firm, juicy texture. After draining, it loses some of its liquid sweetness but retains the characteristic aroma of cooked corn, making it easy to integrate with other dish ingredients. It is a good source of carbohydrates and fiber, contains small amounts of protein, B vitamins, folic acid, vitamin C, and minerals such as magnesium and phosphorus, as well as antioxidants lutein and zeaxanthin that support eye health. In the kitchen, it works well in salads, salsas, soups, casseroles, tacos, omelets, and as an addition to grain dishes or vegetable purees. After opening, it is best to transfer to an airtight container, store in the refrigerator for 2–3 days (it can be covered with a small amount of water to maintain moisture); it can also be frozen for about 2 months.
