Description

Chanterelles are small, golden-yellow mushrooms with characteristic funnel-shaped caps and wavy edges, featuring a delicate, slightly fruity and spicy aroma reminiscent of apricot. They have a firm, meaty texture and an intense flavor that holds up well after brief cooking. They are low in calories, rich in protein, fiber, B vitamins, and vitamin D (especially after sun exposure), as well as minerals like potassium and iron; they contain antioxidants that support immunity and have anti-inflammatory properties. In the kitchen, chanterelles are perfect for quick frying in butter, cream, or oil, for sauces, soups, risottos, scrambled eggs, and dishes with poultry or pasta, pairing excellently with dill, parsley, garlic, and white wine.
