Description
Edible flowers, such as pansies or nasturtiums, have a delicate, silky texture and vibrant, multicolored petals; pansies are mild, slightly sweet, and floral, while nasturtiums provide a distinct, peppery note reminiscent of arugula. Their appearance adds aesthetic appeal and flavor contrast to dishes, from dessert garnishes to spicy salad additions. Nutritionally, they are low in calories but rich in vitamins (especially C and provitamin A), flavonoids, and antioxidants, which may support immunity and have anti-inflammatory effects. In the kitchen, they are suitable for salads, sandwiches, cake decorations, herb butter, syrups, infusions, or stuffing. Store them cool in the refrigerator in a flat container lined with a damp paper towel, without washing them until the last moment; it's best to use them within 2–3 days or freeze them in ice cubes for longer storage. Only use certain, unsprayed varieties.
