Lovage
Description
Lovage (Levisticum officinale) is a perennial plant with slender, fleshy stems and feathery, glossy leaves. The flavor is intensely celery-like, with a distinct spicy note and a subtle anise-herb accent, while the aroma is deep and fresh, making it a bold addition to dishes. It is a source of vitamins A and C, minerals such as potassium, calcium, and iron, as well as fiber and essential oils; traditionally used to aid digestion, it has a mild diuretic and anti-inflammatory effect and may stimulate appetite. In the kitchen, the leaves and stems of lovage are added to broths, soups, stews, sauces, and meat, fish, and vegetable dishes, where it wonderfully replaces celery and enriches herb butters, dressings, and marinades. Store in the refrigerator wrapped in a damp paper towel in a perforated bag and use within a few days; it can be preserved longer by finely chopping and freezing in oil or by drying.
