Description
Semolina flour is a type of wheat flour with a distinctly coarser, slightly grainy texture and a light yellowish hue, providing a subtly nutty, neutral flavor that does not overpower dishes. Due to its noticeable granulation, baked goods and dumplings gain structural flakiness and a pleasant texture. Nutritionally, semolina is primarily carbohydrates with a moderate gluten protein content, trace amounts of fat, and certain B vitamins and minerals typical of wheat; it provides quickly available energy and helps achieve filling, structurally sound baked goods. Semolina is excellent for shortcrust and semi-shortcrust pastries, bundt cakes, dumplings, gnocchi, pierogi, as well as for thickening fillings and breading. It should be stored tightly in a dry, cool place, away from moisture and odors; for longer shelf life, it is advisable to keep it in the refrigerator or freezer.
