Description
Fine flour (type 450) is a light, slightly creamy flour with a fine, somewhat lumpy texture and a mild, neutral flavor with a delicate nutty note; it gives baked goods a pleasant, slightly crumbly texture. From a nutritional standpoint, it is mainly a source of easily digestible carbohydrates and gluten protein, containing small amounts of fat as well as minerals and B vitamins; as a refined flour, it has less fiber than whole grain counterparts, so it is advisable to use it in moderation and combine it with fiber-rich products. Fine flour works well in cakes, cookies, dumplings, pierogi, breading, and as a base for yeast and shortcrust pastries, improving structure and flakiness. Store it in a dry, cool place in an airtight container, away from moisture and odors; keeping it in the refrigerator or freezer can extend its shelf life and prevent pests.
