Description
Wheat flour type 450 or 00 is a finely milled, light powder with a neutral, slightly sweet taste and a velvety, almost snowy texture that promotes a smooth structure in baked goods and pasta dough. Type 450 and 00 differ slightly in their degree of refinement; both are low in fiber and very delicate. Nutritionally, this flour is primarily a source of easily digestible carbohydrates and a moderate amount of protein; it also contains small amounts of B vitamins and minerals, but has less fiber and micronutrients than whole grain flours. It is a quick source of energy and is suitable for easily digestible diets, although it is worth combining it with products richer in fiber. It is most commonly used for cakes, sponge cakes, delicate cookies, pasta, and pizza (especially type 00), pancakes, and for thickening sauces.
