Chickpea flour (besan)
Description
Chickpea flour (besan) is a finely ground, creamy-yellow powder with a subtly nutty-earthy flavor and a dense, slightly floury consistency that adds a distinct, pleasant aroma without overwhelming dishes. From a nutritional standpoint, it is rich in plant protein and fiber, has a relatively low glycemic index, provides iron, folic acid, and magnesium, and promotes satiety and blood sugar stabilization — making it a valuable ingredient in vegetarian and gluten-free diets. The culinary applications of besan are wide-ranging: it is suitable for pancakes, fritters, and socca-type flatbreads, as a coating and binder in vegetable patties, for traditional fried snacks (pakora), thickening sauces, and baking gluten-free products. It should be stored in an airtight container in a cool, dry place; to extend its shelf life, it is advisable to keep it in the refrigerator or freezer to avoid rancidity and odor absorption.
