Butter (frangipane)
Description
Frangipane butter is a creamy, buttery-almond mixture with a subtly sweet, nutty aroma and a smooth, light cream color with a slightly golden sheen after baking. The texture can be thick and silky, easy to spread or fill pastries. Nutritionally, frangipane is calorie-dense and rich in fats—both saturated from butter and beneficial monounsaturated from almonds—it also contains protein, vitamin E, magnesium, and calcium from nuts, but also sugar and cholesterol from eggs, so it should be consumed in moderation. It is typically used as a filling for tarts, galettes, cakes, and cookies, as well as a layer in desserts, pairing wonderfully with pears, apples, plums, chocolate, and citrus. Store frangipane in an airtight container in the refrigerator for 2–3 days or freeze in portions for about a month; baked goods with frangipane are best consumed within 2–3 days, kept in a cool place.
