Description
Miso paste is a thick, pasty seasoning that ranges in color from light beige to yellow-brown to dark brown, with a distinct umami flavor that is slightly salty and sometimes mildly sweet, depending on the type (shiro, awase, aka). Its aroma is earthy and fermented, and the texture can be smooth or slightly grainy, depending on the degree of processing and the grains used (soy, rice, barley). Miso is a source of plant protein, B vitamins, minerals, and compounds produced during fermentation that may support gut health, although its salt content requires moderate use. It is typically used in soups (e.g., miso), sauces, marinades, dressings, glazes for fish and vegetables, and as a flavor enhancer in stews and ramen. Once opened, store in an airtight container in a cool place or in the refrigerator, protect from contamination, and use within a few months for best freshness.
