Description
Milk for brushing is a thin, milky liquid glaze with a delicate, slightly sweet flavor and a semi-matte or slightly glossy finish after baking, usually prepared from cow's milk (whole or skimmed) or its plant-based alternatives. It gives baked goods a subtle golden color and a soft crust, while also helping to adhere seeds or sugar. Nutritionally, milk provides protein, calcium, and B vitamins as well as vitamin A, although when used as a brushing agent in small amounts, it contributes only a trace of the daily requirement. For those with lactose intolerance or who prefer plant-based versions, alternatives are available that change the flavor and nutritional values. Milk for brushing is used on bread, rolls, cookies, and sweet rolls, as well as a base for mixing with eggs or sugar for a more intense color. It should be stored in the refrigerator in a closed bottle or container and used within its shelf life; it can be briefly frozen, but after thawing, it requires mixing.
