Okra
Description
Okra is elongated, light to dark green pods with fine hairs and numerous round seeds; the taste is mild, slightly sweet, and when cooked, it often has a characteristic slimy texture that thickens dishes. It is low in calories and rich in fiber, vitamin C, vitamin K, folic acid, minerals such as magnesium, and antioxidants. Regular consumption may support digestion due to the plant mucilage, help regulate blood sugar levels, support heart health by lowering cholesterol, and provide nutrients essential for the immune system. Okra works great in stews and soups (e.g., gumbo), braised, fried, grilled, pickled, or added to dishes with tomatoes, garlic, lemon, and spices. To store it as long as possible, do not wash before storing, place it in a paper bag or perforated container in the refrigerator, and use within 3–5 days; it can also be blanched and frozen.
