Description
Unrefined coconut oil has a distinct, natural coconut aroma and a slightly sweet taste; at room temperature, it usually appears as a white, creamy solid fat that easily melts into a clear liquid when heated. As a fat rich in medium-chain fatty acids, especially lauric acid, it provides concentrated energy and has some antibacterial and antioxidant properties, but it contains a high proportion of saturated fats, so it is advisable to use it in moderation in a balanced diet. In the kitchen, unrefined coconut oil pairs well with Asian dishes and curries, for frying over moderate heat, baking, smoothies, and desserts, as well as being added to coffee or used to finish dishes for a coconut aroma. Store it in a tightly sealed jar in a cool, dark place away from strong odors; at lower temperatures, it hardens, and gentle heating is enough to return it to a liquid consistency.
