Pistachios
Description
Pistachios are small, oval seeds with an intensely green interior peeking through a purple-brown shell; they have a pleasantly crunchy texture and a sweet-nutty, slightly buttery flavor with subtle floral notes. They can be found in their shells or shelled, and their color and aroma add character and visual appeal to dishes. Pistachios are rich in monounsaturated and polyunsaturated fatty acids, protein, fiber, and vitamins and minerals such as vitamin B6, potassium, magnesium, and vitamin E, as well as antioxidants (lutein, zeaxanthin). Regular moderate consumption supports heart health, blood sugar control, satiety, and eye health. In the kitchen, they are suitable for snacks, salads, desserts, creams, dried fruits, pesto, or breading for meats and fish.
