Description

An aromatic and warming drink, perfect for chilly autumn and winter evenings. This is a non-alcoholic version of popular mulled wines, inspired by Scandinavian Glögg and German Glühwein. The depth of flavor comes from naturally cloudy apple juice, which combined with spicy seasonings – cinnamon, cloves, and star anise – creates an incredibly rich composition. Freshness and a slightly citrus note are introduced by the orange, while a sprig of rosemary adds a surprising, forest-like aroma that beautifully balances the sweetness. The drink has a beautiful, deep amber color, and the floating slices of orange and whole spices make it look incredibly appetizing. Served hot, in thick mugs or glasses, it is an excellent alternative to tea or coffee, as well as a great drink for gatherings with family and friends.

Preparation steps

Start by thoroughly preparing the orange, as you will be using its peel. Scrub it well under hot running water using a vegetable brush. Then pour boiling water over it. Cut half of the orange into thin slices about 0.5 cm thick. Squeeze the juice from the other half into a small bowl. If you are using optional ginger, peel it with a teaspoon (this is the easiest way) and slice it thinly.

To wash oranges, you can use a little baking soda to better remove wax and pesticides. Make sure to remove all the seeds from the orange slices that could add bitterness to the drink.

Pour the entire liter of apple juice into a medium-sized pot (with a capacity of about 2-3 liters). Add the freshly squeezed orange juice and the sliced orange pieces. Toss in all the spices: two cinnamon sticks, about 8 cloves, two star anise, and two sprigs of fresh rosemary. If using, add the ginger slices now as well. Gently stir everything with a wooden spoon.

It is best to use a stainless steel or enamel pot. Avoid aluminum pots, as the acid from the fruits can react with the metal, giving the drink an unpleasant aftertaste.

Place a pot on the stove over medium heat. Heat the beverage, stirring occasionally, until it is very hot, but do not bring it to a boil. When the first small bubbles start to appear on the surface, immediately reduce the heat to the minimum. Cover the pot with a lid, leaving a small gap, and let the beverage gently heat (known as 'flashing') for about 15-20 minutes. This process will allow the spices to release their full aroma.

This is a key step! You must not bring the mulled wine to a boil. Boiling will cause the precious aromas to evaporate, and the spices may become bitter. The liquid should be on the verge of boiling, but never bubbling.

After 15-20 minutes of gentle heating, remove the pot from the heat. Set it aside for 1-2 minutes to let the liquid cool slightly. Now add the honey. Pour it into the pot and stir slowly until it completely dissolves. Taste the drink, and if you prefer a sweeter flavor, you can add another tablespoon of honey.

Add the honey at the end, to the slightly cooled liquid, so it doesn't lose its valuable health properties, which are destroyed by high temperatures. If you want to prepare a vegan version, replace the honey with maple syrup or agave syrup.

Prepare mugs or glasses made of thick glass. You can strain the mulled wine through a fine sieve to make it clear, or ladle it directly from the pot along with some spices and fruits for a more rustic look. Garnish each serving with a fresh slice of orange or a small sprig of rosemary. Serve immediately while hot.

Use mugs with handles, as the drink is very hot. A ladle is best for pouring, as it allows you to control the amount of spices in each serving and avoid spills.

If you have leftover mulled wine, strain it from the fruits and spices (left for too long can impart bitterness). Store it in the refrigerator in a tightly sealed jar or bottle for up to 3 days. Reheat slowly over low heat, avoiding boiling.
