Preparation steps
Pour the entire liter of apple juice into a medium-sized pot (with a capacity of about 2-3 liters). Add the freshly squeezed orange juice and the sliced orange pieces. Toss in all the spices: two cinnamon sticks, about 8 cloves, two star anise, and two sprigs of fresh rosemary. If using, add the ginger slices now as well. Gently stir everything with a wooden spoon.
Place a pot on the stove over medium heat. Heat the beverage, stirring occasionally, until it is very hot, but do not bring it to a boil. When the first small bubbles start to appear on the surface, immediately reduce the heat to the minimum. Cover the pot with a lid, leaving a small gap, and let the beverage gently heat (known as 'flashing') for about 15-20 minutes. This process will allow the spices to release their full aroma.
After 15-20 minutes of gentle heating, remove the pot from the heat. Set it aside for 1-2 minutes to let the liquid cool slightly. Now add the honey. Pour it into the pot and stir slowly until it completely dissolves. Taste the drink, and if you prefer a sweeter flavor, you can add another tablespoon of honey.
Prepare mugs or glasses made of thick glass. You can strain the mulled wine through a fine sieve to make it clear, or ladle it directly from the pot along with some spices and fruits for a more rustic look. Garnish each serving with a fresh slice of orange or a small sprig of rosemary. Serve immediately while hot.
