Beef snouts

Description

Beef tongues are a meaty, slightly fibrous cut of meat with a dense texture and a pleasantly intense beef flavor; when cooked, they have a smooth, slightly pink and shiny surface, and when peeled, they contrast with a creamy interior that has a distinct texture. In the kitchen, they work well both as the star of the show in jellies, cold appetizers, and salads, as well as an addition to stews, fillings, tacos, or pâtés, pairing well with sour and spicy sauces and herbs. Nutritionally, tongues are a source of high-quality protein, iron, B vitamins (especially B12), zinc, and collagen, which supports blood formation, tissue regeneration, and metabolic functions, although they contain a moderate amount of fat and cholesterol, so it is advisable to consume them in moderation. They should be stored in a cool place: raw for up to 1–2 days in the refrigerator or up to 3 months in the freezer, cooked can be kept in an airtight container for 3–4 days in the refrigerator, and should only be thawed in the refrigerator.
