Description
Jalapeño chili pepper is a short, cylindrical pepper with a shiny skin that is usually green, ripening to red, with a crunchy flesh and seeds concentrated in the inner partition. The flavor is fresh and fruity with a distinct yet moderate spiciness (about 2,500–8,000 Scoville units), which gives dishes a spicy but not overpowering character. After cooking, it softens and gains sweeter notes, and the roasted or grilled skin takes on a smoky aroma. Jalapeño is low in calories, rich in vitamin C, provitamin A, B vitamins, potassium, and fiber; the capsaicin it contains has anti-inflammatory and pain-relieving properties and may support metabolism and digestion. In the kitchen, it pairs well with salsas, sauces, marinades, cheese stuffing, grilled dishes, Mexican dishes, salads, and pickles. It is best stored in the refrigerator in a perforated bag or container in the vegetable drawer for 1–2 weeks; for longer storage, it is advisable to freeze, dry, marinate, or preserve it, avoiding moisture that promotes mold.
