Ground almonds
Description
Ground almonds are a fine, creamy beige flour with a delicate, slightly sweet, and intensely nutty note, along with a subtle, pleasant aroma of almonds. Their texture can be slightly oily due to natural oils, which adds a pleasant moisture to baked goods and fillings. Nutritionally, ground almonds provide plant protein, fiber, monounsaturated fats, as well as vitamin E, magnesium, and minerals such as calcium. Regular, moderate consumption may support heart health due to beneficial fats, act as an antioxidant, and increase feelings of fullness, which helps with weight management. In the kitchen, they are used for cakes, cookies, almond crème, frangipane, macarons, and as an ingredient in gluten-free flours, breading, or sauce thickeners. They should be stored in an airtight container in a cool, dry, and dark place; for longer freshness, it is best to keep them in the refrigerator or freezer to prevent the oils from going rancid.
