Description

Green curry paste is an intensely green, smooth blend of fresh green chilies, lemongrass, galangal, kaffir lime leaves, coriander, garlic, and shallots, with a distinctly herbal, spicy-sour, and citrus flavor profile. The finish is aromatic and sharp, but it can be easily controlled by adding more coconut milk or yogurt. As a concentrated spice, it has few calories per serving but provides antioxidants and vitamin C from the herbs and lime, as well as anti-inflammatory and digestive compounds (capsaicin from chilies, compounds from galangal). However, it is important to note that ready-made pastes can contain a lot of salt. The paste works great as a base for green curry with coconut milk, marinades for meat, fish, and tofu, seasoning soups, sauces, stir-fries, or dips, pairing well with rice, rice noodles, and vegetables. Once opened, store in an airtight container in the refrigerator, optionally covering with a thin layer of oil; the shelf life is usually 2–4 weeks, and portions can be frozen in cubes for longer storage.
