Enoki mushrooms
Description
Enoki are long, thin mushrooms with white to creamy, delicate caps and firm, crunchy stems; the flavor is subtle, slightly sweet with a delicate umami note, making them very versatile. Nutritionally, they are low in calories, providing plant protein, fiber, B vitamins, potassium, as well as antioxidants and beta-glucans that support immunity, gut health, and may positively affect lipid profiles. In the kitchen, enoki work well in soups, ramen, hot pots, salads, stir-fries, and as a delicate snack or garnish — they are added at the end of cooking to maintain their crunch or eaten raw. Store in the refrigerator in a paper bag or a container with good air circulation, without washing before storing; use within 5–7 days, cutting off the tough base before use.
