Fresh mushrooms
Description
Fresh mushrooms have a delicate, slightly earthy flavor with a subtle umami note and a firm, meaty texture. The caps are smooth, most often white or creamy, with a short stem and dense interior, making them look appetizing both raw and after cooking. They are low in calories and fat, providing plant protein, fiber, B vitamins (especially B2, B3, and B5), selenium, potassium, and antioxidant compounds; under UV light, they can also increase their vitamin D2 content, which supports immunity, metabolism, and heart health. Mushrooms are suitable for frying, grilling, soups, risottos, sauces, casseroles, and salads, and their umami flavor makes them a good substitute for some meat. Store them unwashed in the refrigerator in a paper bag or breathable container, ideally consuming within 3–7 days; they can also be sautéed and frozen in advance.
