Preparation of ingredients

Make sure all ingredients are chilled (ham and cheeses are easier to shape). Take the cream cheese and mayonnaise out of the fridge about 10 minutes earlier so they are not icy — they should be cool but creamy. If the cheese is not sliced, cut it into thin slices about 1-2 mm thick using a sharp knife or a cheese slicer.

Use a cutting board and a sharp knife. If the cheese is very hard, leave it at room temperature for 15 minutes to make cutting easier. Do not leave the cheeses in warm air for too long.

Preparing the filling

In a medium bowl, place 150 g of cream cheese. Add 30 g of mayonnaise and 20 g of mustard. Mix thoroughly with a wooden spoon or spatula for about 1–2 minutes, until the mixture is smooth and uniform. Add 1 g of salt and 1 g of pepper (a pinch of each) and mix again. If you are using chives (30 g), wash them, dry them, chop them very finely (about 1–2 mm), and fold them into the mixture. The consistency of the filling should be creamy, slightly firm, so that it does not run off the ham — it should be spreadable in a thin layer.

Use a medium bowl (about 1 l) and a silicone spatula or spoon. You can also use a hand mixer on the lowest setting for 15–20 seconds to achieve a perfectly smooth mixture. Do not thin out the mayonnaise too much — the filling should be a thick paste.

Shaping the rolls

Lay a piece of plastic wrap or parchment paper on the board. Take a single slice of ham and lay it flat on the board. If the slice is folded, gently unfold it. Spread about 16–18 g (about 1 tablespoon) of the prepared filling evenly on one slice — place it along the longer side of the slice, leaving a 1 cm free edge at the end. On top of the filling, place a thin slice of cheese (about 16–17 g).

Use a tablespoon or a small spatula to spread the filling evenly. Do not place the filling too close to the edges to prevent it from spilling out while rolling.

Tightly roll the slice from the side with the filling, rolling evenly and gently tightening the slice to keep the roll compact. When you reach the end, gently press the entire roll with your fingers to seal the edges. If the slice comes apart, you can wrap the roll in plastic wrap and gently squeeze. Repeat the process for all slices — forming one roll takes about 20–30 seconds. If you want, you can secure the roll with a toothpick (remove the toothpicks before serving).

Use disposable gloves or clean hands. If the slice is very thin and breaks, place a thin layer of foil on it and roll it up carefully. Do not squeeze too hard, as the filling may leak out.

Arrange the prepared rolls on a flat plate or serving dish, seam side down, to maintain their shape. Loosely cover with plastic wrap and place in the refrigerator for at least 20–30 minutes — this will allow the filling to firm up slightly, making it easier to slice and present nicely. The entire chilling step takes about 20–30 minutes.

Use a flat plate or tray. Do not place heavy items on the rolls. If you plan to prepare them a few hours in advance, chill them well and store them in the refrigerator covered tightly.

Line a platter with fresh arugula (50 g) as a decorative base. Arrange the rolls evenly on the arugula, seam side down. If you like, cut each roll diagonally in half — this will give you 24 small snacks. Sprinkle the top with chopped chives and serve with lemon slices, pickled cucumbers, or horseradish on the side. Serve chilled.
