Black pepper (ground)
Description
Black pepper (ground) is a fine, dark brown powder with an intense, spicy-aromatic scent that has a slight citrus note and a warm bitterness. Its freshly ground version has a more pronounced aroma and sharper flavor, which enhances and balances dishes, giving them character without overpowering. Nutritionally, pepper contains small amounts of vitamins and minerals, as well as the alkaloid piperine, which has antioxidant and anti-inflammatory properties and may improve the absorption of certain nutrients. Typical uses include seasoning meats, soups, sauces, salads, eggs, and vegetable dishes, as well as using it as a finishing spice. Store in an airtight container, in a cool, dark place away from moisture and heat sources; ground pepper is best used within 6–12 months to maintain its aroma.
