Demerara sugar
Description
Demerara sugar is light brown crystals with a distinct, slightly caramel note and a crunchy texture, which give dishes a pleasant, fuller flavor than white sugar. Nutritionally, it is mainly sucrose providing quick energy, but it retains trace amounts of molasses, iron, calcium, and potassium, which is why it is seen as a less processed alternative to refined sugar; however, the health benefits are limited, and it should be consumed in moderation. In the kitchen, demerara is great for coffee and tea, desserts, cakes, crumbles, cookies, caramelization, and as a decorative sprinkle that adds texture and shine. It should be stored in an airtight, dry container in a cool place, away from strong odors; if clumping occurs, you can add a few grains of rice to the container to absorb moisture.
