Chili flakes (gochugaru)
Description
Chili flakes (gochugaru) are a Korean product with an intense red color, ranging from light to deep, with a flaky texture and medium heat; the flavor combines a delicate fruity sweetness, subtle smokiness, and pleasant warmth that builds gradually rather than burning immediately. They greatly enhance the aroma of dishes, adding color and depth, which is why they are a staple in kimchi, stews, marinades, sauces (e.g., gochujang), meat seasonings, soups, and noodle dishes, and they also pair well with salads or pickles. Nutritionally, the flakes contain lycopene, vitamins A and C, as well as capsaicin and antioxidants that support immunity, circulation, and metabolism, and have anti-inflammatory properties. To preserve their aroma and color, store them in an airtight container in a cool, dark place away from moisture; longer storage is well-suited for the refrigerator or freezer, which extends freshness and flavor intensity.
