Description
The porcini mushroom is a fungus with a brown, smooth cap and a light cream stem with a spongy underside instead of gills. It has a meaty, firm texture and a delicate, nutty-forest aroma with a subtle sweetness, making it pleasant in dishes without overpowering the flavor. It is low in calories, relatively high in protein compared to calories, fiber, B vitamins, and minerals such as potassium and selenium. It contains antioxidants and β-glucans that support immunity. In the kitchen, porcini mushrooms work well in soups, risottos, creamy sauces, sautéed with onions, pickled, or dried for autumn dishes; they pair well with potatoes, meat, pasta, and herbs. Store fresh in the refrigerator in a paper bag or breathable container for a few days, do not wash by soaking before storing, and for longer preservation, dry, blanch and freeze, or preserve by pickling.
