Quinoa
Description
Quinoa is small, slightly oval grains with a creamy-pearl color (there are also red and black varieties) that have a delicate, nutty-earthy flavor and a slightly crunchy texture when cooked; it is worth rinsing them before use to remove the bitter saponin coating. It is a pseudocereal with high culinary value, cooks quickly (about 12–15 minutes), and easily combines with spices and liquids while maintaining the shape of the grains. Quinoa is rich in complete protein containing all essential amino acids, fiber, magnesium, iron, and antioxidants, is gluten-free, and has a low glycemic index, which promotes satiety and heart health. It pairs well with salads, grains, pilafs, puddings, vegetable patties, and soups. Store raw quinoa in an airtight container in a dry, cool place, and cooked quinoa in the refrigerator for up to 4 days or frozen for 2–3 months.
