Kefir
Description
Kefir is a slightly sour, creamy drink with a smooth, somewhat fizzy consistency and a white to creamy color, with a subtle yeast-sour note. It is rich in protein, calcium, and B vitamins, and contains live probiotic cultures and yeasts that support gut flora and digestion; part of the lactose is also partially broken down, which may ease tolerance in individuals with mild intolerance. The fat content depends on the milk used, which affects the calorie count and flavor. Kefir works great in smoothies, cold soups, sauces, marinades, and baked goods as a substitute for buttermilk or yogurt, adding a fresh tartness and creamy texture to dishes. Store kefir in the refrigerator in a tightly sealed bottle or jar, preferably consume within 7–10 days of opening, and avoid heating it to preserve the effectiveness of the probiotics.
