Description
Arugula (or salad mix) has an intense, slightly peppery and nutty flavor; the leaves of arugula are dark green, narrow, and gently serrated, while the salad mix offers a variety of shapes, colors, and textures ranging from mild to bold. It is low in calories, rich in vitamins K, A, and C, folic acid, minerals such as calcium and iron, as well as antioxidants and natural nitrates that support circulation and have anti-inflammatory properties. In the kitchen, arugula and salad mixes work well as a base for salads, an addition to sandwiches, pizzas, and pasta, an ingredient in pesto, smoothies, or lightly sautéed with meat and fish dishes; they pair well with citrus fruits, cheeses, nuts, and olive oil. Store them in the refrigerator unwashed, in a perforated bag or wrapped in a paper towel, in a cool place; use within 3–5 days, avoiding crushing and excessive moisture.
