Sprig of rosemary
Description
A sprig of rosemary is an aromatic, needle-like stem with vibrant green leaves and a hard, woody core; the flavor is lively, piney-camphor with a citrus note, adding depth and intensity to dishes. In small amounts, it provides vitamins (A, C) and minerals (iron, calcium), is rich in antioxidants, and exhibits anti-inflammatory properties; it has traditionally been used to support digestion and concentration, although the benefits are moderate and dose-dependent. Culinarily, a sprig of rosemary pairs well with meat (especially lamb and poultry), roasted potatoes, vegetables, olive oil, bread, and in marinades and infusions; it is often used whole for flavoring and removed before serving. It is best stored wrapped in a damp paper towel in the refrigerator or placed in a glass of water, and for longer storage, it can be dried or frozen in olive oil cubes.
