Lactose-free feta cheese is a white, crumbly cheese with a creamy texture and a distinctly tangy-salty flavor with a slight acidity, often crumbled or cut into cubes. It resembles traditional feta in appearance, with fine irregularities and a moist surface, pleasantly melting in the mouth. Nutritionally, it is a valuable source of protein and calcium as well as B vitamins, and due to the removal of lactose, it is suitable for people with lactose intolerance, offering easier digestion while maintaining the same energy values. However, it is important to note the moderate fat and salt content, so portion control is advisable. In the kitchen, lactose-free feta works perfectly in salads (e.g., Greek salad), casseroles, vegetable fillings, on pizzas, and in pasta dishes; it can also be grilled or marinated in oil with herbs. Store in the refrigerator at a temperature of 0–4°C, preferably in the original brine or an airtight container with the liquid; use opened feta within about 5–10 days. Freezing alters the texture, so it is not recommended unless necessary.
