Description
Goat cheese in the form of a log is a roll of soft, creamy cheese with a white color and a delicate, slightly crumbly texture. The taste is fresh, tangy with a distinct hint of goat aroma, which can be milder than in aged cheeses; the rind usually does not exist, highlighting the smooth consistency of the interior. Nutritionally, the log provides highly digestible protein, calcium, vitamins A and B2, and short-chain fats that can be easier to digest than cow's fats; it often contains less lactose, which can be beneficial for those with intolerance. In the kitchen, it pairs well with fresh salads, bread, tarts, grilled vegetables, and fruits such as pears or figs, as well as being a great addition to dips and sandwiches. Store in the refrigerator wrapped in parchment paper or in a light container, avoiding excessive moisture and odors; best consumed within 7–14 days.
