Description
Roquefort is a strongly aromatic blue cheese made from sheep's milk, with a creamy, crumbly texture and characteristic blue-green veins of Penicillium roqueforti; its flavor is spicy, salty, and slightly sharp, with a distinct nutty note and a hint of cellar moisture. From a nutritional standpoint, it provides protein, saturated fats, calcium, vitamins A and B12, and small amounts of probiotic cultures; when consumed in moderation, it supports bone health and supplements the diet with nutrients, although it's important to monitor sodium and fat intake. Roquefort pairs perfectly with salads, steak sauces, creamy dips, desserts with honey and pear, and on a cheese board, and it melts wonderfully in hot dishes. Store it in the refrigerator wrapped in parchment or wax paper and loosely in foil, in a cool, humid part; once opened, consume within 1–3 weeks and avoid freezing, which alters its texture and flavor.
