Description
Taleggio is an Italian cow's cheese with a washed rind, characterized by a soft, creamy texture and a light salmon-colored, thin rind; it has an intense, earthy-spicy aroma, and its flavor combines buttery sweetness with delicate acidity and a subtle salty note. Nutritionally, it provides high-quality protein, calcium, phosphorus, and vitamin B12, supporting bones and metabolism, but it also contains saturated fats and sodium, so it should be consumed in moderation.
